Tapioca Fried Cake Recipe

Unlike the crunchy sprinkle biscuit, this deep fried gummy cake combines with coffee and has a taffy consistency. It is prepared in a very simple way by scalding the cassava gum with boiling milk and frying it in the oil in the desired shape (the braid, donut and snake shape are the most common).

Ingredients for making fried tapioca cake:

 500 grams of dried cassava gum

 1 beaten egg

 1 cup of boiling milk

 1 teaspoon of salt

 frying oil

 1 cup grated parmesan cheese (optional)

How to make fried tapioca cake:

To prepare this tapioca dumpling, start by mixing the cassava gum with the salt in a bowl.

Tip: This cassava gum is dry, different from the hydrated cassava gum used to make beiju or tapioca in the pan. In some regions of Brazil it is known as northeastern caroçuda gum or tapioca de coro.

Bring the milk to a boil in a pan. When it is boiling, throw it straight into the bowl (without letting it cool), to scald the gum, stirring quickly with a spoon.

Tip: When the dough is less hot, you can put your hand to mix.

Then add the beaten egg and, if you like, add the cheese as well. Knead and knead by hand for about 5 minutes, the gum will dissolve until it becomes a very smooth and elastic dough, peeling off the basin and the hand.

Tip: If your cassava gum does not dissolve while kneading and kneading, it is because you are not using the correct cassava gum to prepare this recipe. If the dough is too dry and cracking, add a little more milk or water.

Then, to make the fried dumpling, remove a portion of the dough and shape it in the way you prefer: in snake, moth, donut, etc. Do this with all the dough and place on a baking tray (no need to grease).

Put the oil in a pan and add the biscuit to the cold oil - this is important so the muffin doesn't soak or splash. Heat and fry until fully grown, golden and slightly cracked. Remove to a plate with absorbent paper.
